A traditional Greek pudding that everyone enjoys.

- Wash the rice and drain it.
- In a pot of add water three times the amount of rice and bring it to a boil then add salt.
- When it boils, add the rice.
- Simmer for 12 minutes, over very low heat, until the rice is cooked.
- Add the milk, sugar and mastic and stir.
- When the rice is boiling, dissolve the cornflour in half a cup of cold water and, stirring, pour it into the pot.
- Simmer for a while until it starts to thicken.
- While it is hot, divide the mixture into 6 bowls or 6 tall glasses.
- Let it cool down well and freeze it in the refrigerator.
- Once it has cooled, sprinkle with cinnamon just before serving.
- Serve hot or cold, depending on your preference.
