Greek Rice pudding

A traditional Greek pudding that everyone enjoys.

Ingredients

Directions

  1. Wash the rice and drain it.
  2. In a pot of add water three times the amount of rice and bring it to a boil then add salt.
  3. When it boils, add the rice.
  4. Simmer for 12 minutes, over very low heat, until the rice is cooked.
  5. Add the milk, sugar and mastic and stir.
  6. When the rice is boiling, dissolve the cornflour in half a cup of cold water and, stirring, pour it into the pot.
  7. Simmer for a while until it starts to thicken.
  8. While it is hot, divide the mixture into 6 bowls or 6 tall glasses.
  9. Let it cool down well and freeze it in the refrigerator.
  10. Once it has cooled, sprinkle with cinnamon just before serving.
  11. Serve hot or cold, depending on your preference.
