Moussaka

  1. Clean and cut your vegetables into circles, fry in olive oil remove add salt and set aside to cool. For the meat sauce, in a pot add the olive oil and saute the minced meat add the onion, garlic,cinnamon stick, and seasonings and saute. Once done add the cognac, tomato paste, and the chopped tomatoes bring to a boil add water lower heat and boil for 45 minutes. Once done remove cinnamon stick. For the béchamel add in a pot the butter and flour saute until the flour begins to get a color not dark nice light color, remove from the heat and add the milk the eggs beaten and all the spices, salt and pepper. Bring back to the heat stirring constantly until it starts to thicken, once it gets to the point we want remove and add the kefalotyri cheese.
  2. To assemble in a oven pan first add the fried potatoes on the bottom then the eggplants on top then the zucchini, cover with the meat sauce the top with the béchamel sprinkle some cheese and bake 250 degrees Celsius for 35 minutes or until it gets a nice golden brown color.
