- Bake the eggplants in the oven until soft, also bake the red peppers.
- We clean them and cut them into cubes.
- Finely chop the spring onions, parsley and dill.
- Mix the eggplants with the peppers, the onions, the parsley, the dill, the mint and the feta, the kefalotyri.
