A fresh flavourful alcohol free cocktail.

Ingredients

  1. Place the sugar and coriander seeds in a heatproof jug or bowl. Pour over the boiling water and let the mixture sit for about 15 minutes or until it has cooled to room temperature. Add the apple cider vinegar and vanilla and mix well. Strain the mixture to remove the coriander seeds. Add the lime juice and mix.
  2. Transfer the liquid to a shallow freezer-safe container or ice cube tray and freeze for 2-3 hours, until it starts to freeze but is not completely solid.
  3. Remove the frozen mixture and place it in a blender that can crush ice, lime slices and cucumber. Add the coconut water and a handful of ice cubes. Blend until smooth, icy, and granita-like. Divide the drink into two lowball glasses or margarita glasses and garnish with a lime slice. Serve immediately.
