A traditional cheese pie from the island of Symi Greece.

  1. To prepare the phyllo. In a bowl, beat the eggs with the milk and yogurt until dissolved. Add the yeast and mix well. We have melted the butter and added the mastic to release the aromas. We also add all the remaining ingredients to the bowl. Our flour is about 1 klg, but that depends on the weather, you might need less or sometimes more flour. Knead well.
  2. Now we make our cheese stuffing, we grate our cheeses and add all the remaining ingredients (eggs,yeast, semolina, banking powder, mint salt and pepper) into a bowl and mix to combine. Leave in the refrigerator.
  3. We open sheets approximately 15 centimeters wide and we fill them with the cheese stuffing and close them.
  4. Brush with an beaten egg and a little milk. Bake at 200 degrees until golden brown.
