- Place a frying pan over high heat.
- Place the chicken thighs in a bowl and add salt, pepper and 2-3 tbsp. olive oil, and mix with your hands.
- Transfer to the hot frying pan and sauté for 2-3 minutes on each side until browned.
- Deglaze with the lemon juice and remove from the heat.
- In a deep baking pan, place the rice, lemon peels, garlic in pieces, rosemary, oregano, salt, pepper, 4-5 tbsp. olive oil, the broth, the juice from the second lemon and the chicken thighs.
- Bake covered with aluminum foil for 50-60 minutes remove the foil, and bake for another 10-20 minutes until golden brown.
