  1. Lay out the parchment paper and place the washed and dried kid goat and the potatoes on it, season with salt and pepper, add the oregano, paprika, lemon zest, lemon juice, and olive oil, and rub the mixture thoroughly into the meat. Next, add the Florina pepper, garlic cloves, and pieces of Graviera cheese. Seal the parchment paper tightly—adding an extra sheet if necessary—and then wrap the bundle in aluminum foil. Place it in a roasting pan and roast at 180°C for 3 1/2 hours, then, remove from the oven, open the wrapping, and roast at 250°C for another 30 minutes until golden brown.
