Wash the cherries and remove the pits with the special tool. I put them in the pot in each row of cherries on a layer of sugar and left them overnight in the refrigerator. The next day I boiled them with water on low heat for about 30 minutes, skimming and without stirring at all. Finally I added the juice and the vanilla, I left it for 12 hours and I boiled it again a little until the syrup thickens.
(If the cherries have softened a lot without tying the syrup, take them out with a slotted spoon and boil the syrup on its own until it sets.)
