Irene's chocolate cake

A soft chocolate cake that my good friend made for us here in Greece when all of us gathered for coffee and "koutsobolio".

Ingredients

  1. In a pot add the butter, the cocoa powder, sugar, instant espresso, cinnamon powder, and the 10 tbsp of water, stir over low heat until the butter has melted and you have a nice syrup. Remove from the heat and add the liquor and the lemon juice, set aside. In a large bowl add the egg whites and the vanilla capsule and mix until they are nice and stiff like a meringue. Remove 1 cup of your chocolate syrup and leave it for later. Add the egg yolks to the chocolate mixture in the pot and mix until smooth, add in a little flour to the chocolate egg mixture, mix and then add a little of the egg whites, fold them gently into the mixture, then again flour and egg whites, until you are done. Be careful not to over mix because the cake won't rise. Butter and flour a cake mold add the mixture and bake in a preheated oven at 170-180 degrees Celsius for about 30-40 minutes. Check if the cake is done with a tooth pick. Once the cake is removed from the oven let it cool place it in a tray and add the chocolate syrup that you have saved. Serve with ice-cream and whipped cream.
