Traditional sweets of Andros Island Greece, made with leftover cake or bread.

Directions

  1. To make walnuts, first preheat the oven to 250°C.
  2. Then, line the baking tray with parchment paper.
  3. In a bowl, mix the walnuts, sponge cake and cinnamon.
  4. Put the egg whites and sugar in a saucepan and mix over low heat until the sugar melts.
  5. Remove from the heat and add it to the walnut mixture.
  6. Transfer the mixture to a piping bag and form on the baking sheet small cookies with a diameter of about 3 cm., with a small distance between them because they rise a little during baking.
  7. Bake them in the preheated oven for 11 minutes.
  8. As soon as they cool down, peel them off the parchment paper and join them in pairs, putting apricot jam between them.
