- To make walnuts, first preheat the oven to 250°C.
- Then, line the baking tray with parchment paper.
- In a bowl, mix the walnuts, sponge cake and cinnamon.
- Put the egg whites and sugar in a saucepan and mix over low heat until the sugar melts.
- Remove from the heat and add it to the walnut mixture.
- Transfer the mixture to a piping bag and form on the baking sheet small cookies with a diameter of about 3 cm., with a small distance between them because they rise a little during baking.
- Bake them in the preheated oven for 11 minutes.
- As soon as they cool down, peel them off the parchment paper and join them in pairs, putting apricot jam between them.
