A bread eaten on Clean Monday and all through fasting.

Ingredients

Directions

  1. In a bowl and dissolve the yeast and the petimezi or honey in lukewarm water.
  2. Then add the olive oil, the tahini and mix.
  3. Then, add about half the flour, salt and work. Then add the rest of the flour until the mixture becomes dough.
  4. When our dough is ready, place it in an oiled pan and let it rise for 45 minutes.
  5. Once our dough has risen, we shape it slightly and divide it into two parts, in order to make 2 laganas afterwards.
  6. Then, we take a pan with non-stick paper, which we oil and spread sesame on the bottom.
  7. Next, we open the dough with our hands to get a lagana shape, press down and expand.
  8. Cover the lagana and leave it for 30 minutes again to swell.
  9. Then, we spread it with the honey that we have dissolved in the water, we press with our fingers to get the characteristic shape.
  10. Finally, sprinkle with enough sesame seeds and bake at 200 degrees Celsius until golden brown.
  11. Petimezi ☆ is grape syrup
  12. ☆ Tip we can add olives, dried tomatoes, onions to our bread, depends on our taste!
