A bread eaten on Clean Monday and all through fasting.
Ingredients

- In a bowl and dissolve the yeast and the petimezi or honey in lukewarm water.
- Then add the olive oil, the tahini and mix.
- Then, add about half the flour, salt and work. Then add the rest of the flour until the mixture becomes dough.
- When our dough is ready, place it in an oiled pan and let it rise for 45 minutes.
- Once our dough has risen, we shape it slightly and divide it into two parts, in order to make 2 laganas afterwards.
- Then, we take a pan with non-stick paper, which we oil and spread sesame on the bottom.
- Next, we open the dough with our hands to get a lagana shape, press down and expand.
- Cover the lagana and leave it for 30 minutes again to swell.
- Then, we spread it with the honey that we have dissolved in the water, we press with our fingers to get the characteristic shape.
- Finally, sprinkle with enough sesame seeds and bake at 200 degrees Celsius until golden brown.
- Petimezi ☆ is grape syrup
- ☆ Tip we can add olives, dried tomatoes, onions to our bread, depends on our taste!
