After it comes to a boil, lower the heat.
Every now and then we skim off the dark foam that comes to the surface.
Let it simmer for about 50 minutes (depending on how soft they become). Stirring constantly because it tends to stick to the pot. Let it almost melt from the boiling.
Add salt towards the end of boiling.
Puree it with the blender. Serve with lemon juice and lemon zest, sliced onions and olive oil.
