Greek chicken avgolemono soup.

  1. In a deep pot, add the chicken with all the vegetables and bouillon, salt and pepper, fill with water until the chicken is covered and bring to a boil. After the chicken has been cooked for 50 minutes, and there is enough broth left in the pot, remove the chicken and all the vegetables, strain the broth. Put it in a clean pot to boil and add the rice, as soon as the rice is ready, chop the boiled vegetables and enough of the meat and add them to our pot(optional). Prepare the egg-lemon, add the egg and lemon zest and juice and beat them with ahand blender, slowly add broth to the mixture while continuing to beat, set aside in a pot, put the butter and flour and roast it a little, add it to the mixture with the egg, lemon and broth and beat with a hand blender to homogenize. Then add this mixture to the soup and let it boil for a while and thicken.
