A traditional Greek soup that's rich in taste.

  1. For the meat
  2. To make the boiled goat, we start by washing the goat and putting it in a deep pot with plenty of water, which covers it well.
  3. We heat it on high heat and, when the water boils a couple of times, we take the meat out with a slotted spoon and throw away the water.
  4. Wash the pieces of goat again and put them back in the (cleaned) pot with plenty of cold water to cover them and a little more.
  5. Add the pepper, a little salt and the bay leaves and let the water boil.
  6. Lower the heat, half-cover the pot and cook for 2½-3 hours, until the meat is very tender, then add the vegetables, season with salt and pepper and cook until the vegetables are soft, but not disintegrating - by this time the goat that is simmering with them will have been cooked.
  7. Serve the boiled goat with the vegetables, while they are all hot, and accompany with feta cheese and sourdough bread.
