Leg of lamb baked in parchment paper/ Kleftiko

Ingredients

Directions

  1. First, wash and dry the lamb with kitchen paper.
  2. Peel the garlic and mix it with salt and pepper.
  3. With a knife, make small slits in the meat and insert the garlic in various places.
  4. Salt and pepper the meat well on all sides and place it in the center of the parchment paper.
  5. Sprinkle with olive oil, add the rosemary, oregano and cheese for the lamb kleftiko, add the baby potatoes.
  6. Wrap the meat well in the greaseproof paper, like a package and tie with a rope.
  7. Put the package in a pan.
  8. Bake in a preheated oven, at a low temperature of 160°C for 2.5 hours until the meat is almost melted.
