Leg of lamb baked in parchment paper/ Kleftiko

- First, wash and dry the lamb with kitchen paper.
- Peel the garlic and mix it with salt and pepper.
- With a knife, make small slits in the meat and insert the garlic in various places.
- Salt and pepper the meat well on all sides and place it in the center of the parchment paper.
- Sprinkle with olive oil, add the rosemary, oregano and cheese for the lamb kleftiko, add the baby potatoes.
- Wrap the meat well in the greaseproof paper, like a package and tie with a rope.
- Put the package in a pan.
- Bake in a preheated oven, at a low temperature of 160°C for 2.5 hours until the meat is almost melted.
