Lemon cod and potatoes baked in the oven
Ingredients
Directions
- Cut all the vegetables, onions, leek, carrot, into thin slices.
- Cut the potatoes into 1 cm slices.
- Place the vegetables in a single layer in a 32 cm pan.
- Place the potatoes in a layer.
- Add salt and freshly ground pepper.
- Cut the tomato into quarters and put it in the pan.
- If we add cherry tomatoes, cut them in half and put them in the pan together with the rest of the vegetables,
- We touch the parsley sprigs and the lemon slices.
- Sprinkle with the olive oil (reserve 2 tbsp for the finish) and pour over 1 fl. hot water or vegetable stock.
- Bake in a well preheated oven at 200ºC, in the air on the middle rack for 45 minutes, until the potatoes are soft and the sauce has mellowed
- Bake the food covered for the first 30 minutes, then uncover and continue baking for 15 minutes.
- When the 45 minutes of baking have passed, put the cod fillets in the ingredients in the pan.
- Sprinkle with lemon juice.
- Place thin slices of lemon on the fish.
- Continue baking for 10 minutes.
- Turn off the lemon cod and let it stand for 5 minutes in the turned off oven.
