Lemon cod and potatoes baked in the oven

Ingredients

Directions

  1. Cut all the vegetables, onions, leek, carrot, into thin slices.
  2. Cut the potatoes into 1 cm slices.
  3. Place the vegetables in a single layer in a 32 cm pan.
  4. Place the potatoes in a layer.
  5. Add salt and freshly ground pepper.
  6. Cut the tomato into quarters and put it in the pan.
  7. If we add cherry tomatoes, cut them in half and put them in the pan together with the rest of the vegetables,
  8. We touch the parsley sprigs and the lemon slices.
  9. Sprinkle with the olive oil (reserve 2 tbsp for the finish) and pour over 1 fl. hot water or vegetable stock.
  10. Bake in a well preheated oven at 200ºC, in the air on the middle rack for 45 minutes, until the potatoes are soft and the sauce has mellowed
  11. Bake the food covered for the first 30 minutes, then uncover and continue baking for 15 minutes.
  12. When the 45 minutes of baking have passed, put the cod fillets in the ingredients in the pan.
  13. Sprinkle with lemon juice.
  14. Place thin slices of lemon on the fish.
  15. Continue baking for 10 minutes.
  16. Turn off the lemon cod and let it stand for 5 minutes in the turned off oven.
