Traditional Parsley Salad from Syros Island

- Clean the parsley from the stems and keep only the leaves. Pour water into a bowl and soak the bread. In the blender, beat the parsley, capers, garlic, spring onion, vinegar, 50 ml of the olive oil and puree the ingredients until they become a paste.
- Add the bread, after squeezing it well, the potatoes and gradually the remaining olive oil. If the paste is tick, thin it with a little olive oil. Finally, add lemon juice (as much as you want), salt, pepper, taste and if necessary correct the taste. Serve the parsley salad chilled with an extra drizzle of olive oil and capers.
