                Traditional Parsley Salad from Syros Island

                                            - Clean the parsley from the stems and keep only the leaves. Pour water into a bowl and soak the bread. In the blender, beat the parsley, capers, garlic, spring onion, vinegar, 50 ml of the olive oil and puree the ingredients until they become a paste.
 
                                            - Add the bread, after squeezing it well, the potatoes and gradually the remaining olive oil. If the paste is tick, thin it with a little olive oil. Finally, add lemon juice (as much as you want), salt, pepper, taste and if necessary correct the taste.
