Pork and lemon potatoes greek style.

- Wash the pork well and put it in a pan. Season well on all sides.

- Peel the garlic and cut it into very small pieces. With a knife 5-6 holes in the meat and put a piece of garlic in each. As much garlic as we have left, we leave it on the pork.

- Peel and wash the potatoes. Cut them into quarters and put them in the pan, next to the pork. Pour a little salt, a little pepper and a little oregano on the potatoes.

- Add lemon juice and zest, olive oil and mustard and about 1/2 cup of water rub the meat with your hands cover with parchment paper and foil bake at 200ºC for about 1 1/2 of an hour, remove parchment paper and foil and bake until you have a nice golden brown colour and your left with a nice rich lemon sauce!
