Pork and lemon potatoes greek style.

Ingredients

  1. Wash the pork well and put it in a pan. Season well on all sides.
  2. Peel the garlic and cut it into very small pieces. With a knife 5-6 holes in the meat and put a piece of garlic in each. As much garlic as we have left, we leave it on the pork.
  3. Peel and wash the potatoes. Cut them into quarters and put them in the pan, next to the pork. Pour a little salt, a little pepper and a little oregano on the potatoes.
  4. Add lemon juice and zest, olive oil and mustard and about 1/2 cup of water rub the meat with your hands cover with parchment paper and foil bake at 200ºC for about 1 1/2 of an hour, remove parchment paper and foil and bake until you have a nice golden brown colour and your left with a nice rich lemon sauce!
