Seafood pilaf

Ingredients

Directions

  1. To make seafood pilaf, first in a pot, boil the squid with the octopus in enough water to cover them for about 30 minutes, until they soften.
  2. Drain and chop them.
  3. In a wide saucepan, heat the oil on medium heat and saute the dry onions for 4-5 minutes, until they soften.
  4. Add the spring onions and rice (both types) and continue to stir for 1-2 minutes.
  5. Pour 6-7 cups of water, mix and cover the pot.
  6. Boil for 10 minutes, add all the seafood, salt and spices and mix.
  7. Lower the heat and continue stirring until the rice has absorbed all the liquid.
  8. Turn off the heat, cover with a clean towel and cover with the lid.
  9. Leave on the stove for 10 minutes, uncover and add the dill and lemon juice.
  10. Our seafood pilaf is ready to serve.
