Spaghetti with zucchini and garlic

- Boil the spaghetti in plenty of salted water and once it is al dente, remove it from the heat but do not drain it.
- In a wide pan, heat the olive oil and saute the courgettes on high heat until soft. It doesn't take more than 3-4 minutes. Add the garlic and cook for a couple of minutes.
- Add the spaghetti to the pan with a spaghetti spoon. The little bit of water they will carry binds the sauce better. Add the basil, mix the parsley and serve with freshly ground pepper and plenty of kefalotiri cheese.
