Spinach rice with fries and sausage

Spinach rice aka spanakirizo with grated french fries, poached egg and village sausage ! Inspired by local products !

Ingredients

Directions

  1. Put the olive oil in a saucepan and sauté the onions, add the spinach and let it wither and lose its volume. Then add the tomato paste, garlic, salt, pepper and rice, add 1 1/2 cup of water and boil on low heat until its liquids are absorbed and the rice is cooked! At the end add the dill, lemon zest and the mint!
  2. Grate the potatoes, rinse, dry well and fry in hot oil!
  3. Put water in a saucepan, add a little white vinegar bring to a boil and then an egg boil until cooked!
  4. Just grill your sausage!
  5. In a plate we put the spinach, the potatoes on top of the feta mousse and the poached egg, around the village sausage! Garnish with chopped onion and dill, add salt and pepper!
