Stuffed Zucchini Blossoms

- Carefully open the flowers and remove the stem from their center. Wash them well and let them drain in a colander.
- Put all the vegetables in the multi mixer and chop them finely. Put them in a bowl, add the rice, minced meat salt, pepper and 1/2 cup olive oil. Mix well and then we fill the blossoms the middle. Wrap the edges towards the center and place in a circle in a saucepan.
- Pour 2 glasses of hot water, 1/2 teaspoon more olive oil and a little salt. Cover with a plate and cook for about 15 minutes.
- Towards the end, add the lemon juice.
- If one wants, one can make avgolemono sauce. I personally like it more like this, without avgolemono.
