Vegetable Trahana

Ingredients

  1. Fine dice all the vegetables,except for the tomatoes, add in a pot the oil and saute them for a while, then add the tomatoes, boil for 20 minutes. add the salt, pepper, remove from heat (I now add the tahini if you haven't added oil) let it cool down, and add the flour. I knead into a dough, make small cakes and spread them on a sheet.
  2. After two hours turn from the other side to dry, continue the process by turning every now and then so the cakes dry out not much, but enough so you can grate them with a cheese grater or a food processor. After that is done put handfuls the food processor and grate. Be careful not to grate it too much, it should have become like rice.Spread it out again to dry, using a low speed fan helps the process. After it is well dried store in glass jars in the refrigerator. Or in food containers in the freezer.
  3. To cook, add 2 cups of water in a pot bring it to boil then add 1/3 cup of your vegetable trahana lower the heat stir constantly until it thickens. You can adjust how thick or thin you like your soup.
