Aubergine Bites

  1. To prepare the aubergine bites, first after washing the aubergines and placing them in a pan with non-stick paper, bake them in a preheated oven at 200o for 45-50minutes and bakethem..

  3. Transfer the pulp to a bowl, add the eggs, garlic, toast and grated cheese and season with salt and pepper.
  4. Add a little chopped parsley and knead with your hands until the ingredients are well mixed. If the dough is not too tight you can add more toast.
  5. Form small round bites about the size of a walnut, cover them with breadcrumbs and fry them in hot vegetable oil (170o C), a few pieces at a time, for 2-3 minutes until golden brown.
  6. Drain them from the oils, by putting them in a tray covered with kitchen paper and serve them hot with greek yogurt!
