Eggplant rolls

A delicious finger food that can be served hot or room temperature. If you like eggplants you will love this easy recipe.

Ingredients

  1. Take your sliced eggplants place them in a baking tray add with a brush a bit of olive oil and bake them for 10min. Remove and let them cool, once they have cooled take a slice of an eggplant add the feta cheese sticks and the mozzarella cheese sticks in the middle of it and roll it up. Do the same until you have rolled all of the eggplant slices. Cover each one in flour, then in the beaten egg then cover in the breadcrumbs. Fry in vegetable oil. You can also bake them in an air fryer.
  2. Serve with tomatoe sauce.
  3. For the tomatoe sauce, add in a pot the olive oil and saute the garlic, then add the grated tomatoes, the tomatoe puree and the rest of the ingredients and boil until you have a nice and thick sauce.
