A rich in flavor bean soup served in Greece especially in the winter.

Ingredients

  1. In a large bowl add your beans and lots of water and soak them overnight.The next day rinse them and add them to a pot with fresh water, on medium heat and boil for 8 minutes. Remove from heat and set aside, in a clean pot add water the chopped onion, the leek, the carrots and the celery, bring to a boil strain the beans and add them to the boiling vegetables. Boil until the beans are soft then add the tomato puree the olive oil and the salt and pepper. Boil until you have a nice and thick soup, serve with chili flakes.
