  1. In a deep pan put the bulgur (groats) and spices, pour the boiling water and cover with a towel and leave to rise for 3-4 hours, then add the flour and start kneading until you achieve a uniform dough. If necessary, add a little hot water.
  2. Put the olive oil and the onions in a deep pan and let them fry well, ie until they get a deep brown color, then add the minced meat and the spices, stirring constantly until all their liquids are absorbed.

Serve with lemon and optionally strained yogurt!
