A Greek beef soup with vegetables and orzo. Reminds us of when we were kids, nostalgic, warm, hearty meal, for winter.

  1. In a pot add the olive oil heat and saute your beef ribs until they are caramelized, remove and set aside, in the same pot add more olive oil if needed and saute all the vegetables until the onions are translucent, except the tomatoes, once they are done add the chopped tomatoes and the meat add water until the meat is covered and boil on medium heat until the meat is soft about 2 hours, add salt and pepper.
  2. Once the meat is soft add your orzo boil until it's done bout 7 minutes. Serve with lemon juice and feta cheese.
